Cassia

Cassia is the bark taken from the trunk of the cinnamon tree, scientifically known as Cinnamomum. Cassia has a very characteristic aroma from the compound Cinnamaldehyde.

Do you know that the pretty cinnamon cassia that you find in your corner shop have traveled from tropical forests of Vietnam? Farmers cut the cassia barks into small pieces, have them dried under the 38 Celcius summer heat, then the barks will later curl into a “cigar”. People carry the commodity to far lands because they are so in love with the strong iconic flavor that are so unique you almost find nowhere else.
