Cassia is the bark taken from the trunk of the cinnamon tree, scientifically known as Cinnamomum. Cassia has a very characteristic aroma from the compound Cinnamaldehyde.
Cassia, also known as single cinnamon, is derived from the Cinnamomum cassia tree in Southeast Asia, including Vietnam.

Thickness: Type A: 2.5mm or more; Type B: 1.5 -2.4mm; Type C: 0.8 – 1.4mm
